We had a small little get together for Superbowl Sunday. I made chili and we had chili nachos and ice cream sundaes for dessert.
I made a huge crockpot full of chili. My chili never tastes the same because it is a little different every time I make it.
This is how I made it:
I browned up a combination of ground beef and sausage in whatever quantities I have on hand. Sometimes I’ll use leftover hamburgers. Sometimes I’ll use leftover cooked sausage patties. This time I used about 1 pound of ground beef and 1 1/2 pounds of seasoned ground pork. I added the brounded meats to the crock pot.
On top of the meat I put 2 cans of kidney beans and 2 cans of pinto beans, rinsed and drained.
At this point I realized that I had about 2 pounds of spicy sausage in the freezer that I have been intending to use in the next batch of chili which I forgot about. I decided to add that to this chili.
I browned up that spicy sausage and added it to the crockpot with the other meats and the beans for a total of about 5 1/2-6 pounds of meat. I added another can of both kidney beans and pinto beans making it 3 cans of each total. I then put in about 3 cups of chopped onions, 3/4 cup of chopped sweet peppers. I usually use whatever color peppers I have on had however, I had onions and peppers from my garden chopped and frozen which I used. That made it convenient. The spices are added next: I added 3/8 tsp cayenne powder, 1 1/2 tsp sugar (I used brown sugar), 1 1/2 tsp oregano, 1 1/2 tsp pepper and 3 tsp salt. Normally I would use about 1 1/2 tablespoon of cumin and 1/2 cup chili powder but I toned it down due to the spicy sausage and added about 1 tablespoon of cumin and about 3 tablespoons of chili powder.
On top that of all that I added a gallon size bag of frozen tomatoes from my garden and later I added a small can of tomato paste to thicken it up a bit and a little bit of beef bouillon to decrease the tomato flavor a bit.
I let that all cook in the crockpot for the day.
Upon tasting it, I realized just how hot that spicy sausage was because the chili was quite spicy. Good flavor but way too hot for us. I had to mellow it out. I added a bit more sugar and through some research discovered that butter or cream will mellow heat out. So I added a 1/2 cup (1 stick) of butter. That helped tremendously. I let it cook and thicken up.
Meal time: We put some chips on the plate and then topped them with the chili, sour cream, shredded cheddar cheese, chopped tomatoes, olives and avocados. It was delicious. Still a bit spicy but the cheese and sour cream helped.
Dessert was of course good ole ice cream sundaes with bananas, toppings and whipped cream.
The superbowl may not have been exciting but the food was good.
